Baked Salmon

Original Recipe:

Ingredients
2 cloves garlic, minced
6 tablespoons light olive oil
1 teaspoon dried basil
1 teaspoon salt
1 teaspoon ground black pepper
1 tablespoon lemon juice
1 tablespoon fresh parsley, chopped
2 (6 ounce) fillets salmon
Directions
1.In a medium glass bowl, prepare marinade by mixing garlic, light olive oil, basil, salt, pepper, lemon juice and parsley. Place salmon fillets in a medium glass baking dish, and cover with the marinade. Marinate in the refrigerator about 1 hour, turning occasionally.
2.Preheat oven to 375 degrees F (190 degrees C).
3.Place fillets in aluminum foil, cover with marinade, and seal. Place sealed salmon in the glass dish, and bake 35 to 45 minutes, until easily flaked with a fork.

Improved Recipe
2 T. olive oil
1 T. melted butter
3/4 tsp basil
1/2 tsp salt
3 T lemon juice,
1 tsp dried parsley,
dash of dill.

Instead of wrapping fillets individually, I just put the foil on top of the baking dish.

Sweet Potatao Casserole

3 cups cooked mashed sweet potatoes
1 cup sugar
2 eggs
1 tsp vanilla
1/2 cup butter
1/3 cup milk

cook sweet potatoes and drain and mash. To potatoes add sugar, eggs, butter, milk, vanilla. Stiir until well blended. Put in buttered casserole dish. Top with topping then bake at 350 degF for 25-30 min.

Topping:
1 cup light brown sugar, 1 cup chopped pecan, 1/3 cup flour, 1/3 cup softened butter or margarine

Combine brown sugar and flour. Cut in butter and add nuts. Sprinkle over top of sweet potatoes

Broccoli Salad

Ingredients
1 head fresh broccoli, cut into bite size pieces 1/2 cup raisins 1/4 cup red onion, chopped 2 tablespoons white sugar 3 tablespoons white wine vinegar 1 cup mayonnaise 1 cup sunflower seeds 10 slices bacon
Directions
Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Crumble and set aside.
In a salad bowl, toss together broccoli, raisins and red onions. In a separate bowl, whisk together the white sugar, vinegar and mayonnaise. Pour over broccoli mixture and toss to coat. Refrigerate for at least 2 hours.
Before serving, sprinkle with sunflower seeds and crumbled bacon. Toss and serve.

Susana Foo Salad Dressing

2大勺新榨橄榄油 (extra virgin olive oil);1小勺新鲜蒜末;1大勺无皮生姜丝;2大勺葡萄醋(balsamic vinegar); 2大勺酱油

注:这个沙拉汁用的醋很重要,一定要用balsamic vinegar,而且用越高级的做成品的味道越香。千万不要用平时做中菜的老陈醋等来做。我试过,成品很杯具,不香且酸得掉牙。

我这次用冷冻的带皮姜末,按原方应该用削了皮的姜丝,味道差不太多,但用姜丝口感更好。

做法:

小汤锅中火烧热,加油,加入蒜末,炸到蒜末变黄, 2-3 分钟即可


关火,用搅拌器(whisk)边倒入醋和酱油边搅动,这时会看到锅里起泡,扑鼻而来的是久挥不去的香味


把锅移开热炉子,加入姜丝拌好,冷却后拌沙拉吃

这个沙拉汁一次可以多做些,放入冰箱保存1-2星期

Granola

Ingredients
3 cups rolled oats
1 cup slivered almonds
1 cup cashews
3/4 cup shredded sweet coconut
1/4 cup plus 2 tablespoons dark brown sugar
1/4 cup plus 2 tablespoons maple syrup
1/4 cup vegetable oil
3/4 teaspoon salt
1 cup raisins
Directions
Preheat oven to 250 degrees F.

In a large bowl, combine the oats, nuts, coconut, and brown sugar.

In a separate bowl, combine maple syrup, oil, and salt. Combine both mixtures and pour onto 2 sheet pans. Cook for 1 hour and 15 minutes, stirring every 15 minutes to achieve an even color.

Remove from oven and transfer into a large bowl. Add raisins and mix until evenly distributed.

Fried Calamari

Ingredients
Vegetable oil, for deep-frying
1 pound clean squid with tentacles, bodies cut into 1/3- to 1/2-inch-thick rings
2 cups all-purpose flour
2 tablespoons dried parsley
Salt and freshly ground black pepper
2 lemons, cut into wedges
1 cup simple tomato sauce, recipe follows or jarred marinara sauce, warmed

Directions
Pour enough oil into a heavy large saucepan to reach the depth of 3 inches. Heat over medium heat to 350 degrees F. Mix the flour, parsley, salt, and pepper in a large bowl. Working in small batches, toss the squid into the flour mixture to coat. Carefully add the squid to the oil and fry until crisp and very pale golden, about 1 minute per batch. Using tongs or a slotted spoon, transfer the fried calamari to a paper-towel lined plate to drain.

Place the fried calamari and lemon wedges on a clean plate. Sprinkle with salt. Serve with the marinara sauce.


Simple Tomato Sauce:

1/2 cup extra-virgin olive oil
1 small onion, chopped
2 cloves garlic, chopped
1 stalk celery, chopped
1 carrot, chopped
Sea salt and freshly ground black pepper
2 (32-ounce) cans crushed tomatoes
2 dried bay leaves
4 tablespoons unsalted butter, optional
In a large casserole pot, heat oil over medium high heat. Add onion and garlic and saute until soft and translucent, about 5 to 10 minutes. Add celery and carrots and season with salt and pepper. Saute until all the vegetables are soft, about 5 to 10 minutes. Add tomatoes and bay leaves and simmer uncovered on low heat for 1 hour or until thick. Remove bay leaves and check for seasoning. If sauce still tastes acidic, add unsalted butter, 1 tablespoon at a time to round out the flavors.

Add 1/2 the tomato sauce into the bowl of a food processor. Process until smooth. Continue with remaining tomato sauce.

If not using all the sauce, allow it to cool completely and pour 1 to 2 cup portions into freezer plastic bags. This will freeze up to 6 months.

Yield: 6 cups

Prep Time: 15 minutes

Cook Time: 1 hour 15 minutes

咸鸡蛋

24个鸡蛋(两盒)

1小碗盐

1杯高度白酒(买不到,用了40度的伏特加酒代替)

保鲜膜若干

做法:

鸡蛋清洗干净,晾干水分,注意,一定要晾干水分哦!

在白酒里面泡一泡,20秒30秒都可以。

然后滚上一层盐

用保鲜膜包好,这样干了以后盐粒不会掉下来

包好的鸡蛋装到大号的保鲜袋里,放到太阳下暴晒一个下午,据说这是出油的关键,我腌鸡蛋前特意查了天气预报,找了个超级晴朗的天气做的,暴晒了一个下午,然后放到阴凉处30天。

吃的时候拿出来,拔掉保鲜膜,冲干净盐粒,放水里煮,水开后煮10分钟。

切开一看,真的个个出油耶!!!香!
